Since "because" is a subordinating conjunction and not a coordinating conjunction, would this make it a complex sentence even though "Mary needed sugar" could stand alone?
Yes, "Molly went to the store, because Mary needed sugar." is complex. Oops! If you remove the subordinating conjunction from the clause, it will still make complete sense. So, having the different conjunctions memorized is sometimes the only way to know the difference. I will rewrite this in the 5th edition update. Thanks for pointing it out.
